Chewy Plant-Based Bar Treats
INGREDIENTS
- 1 3/4 cup of Simple Mills All Purpose Baking Mix (can sometimes find this at the grocery store, also online)
- 1/4 cup of date sugar
- 1/2 cup pistachios
- 1 cup apple sauce
- 1/4 cup avocado oil
- 1/4 cup honey
- 1 teaspoon vanilla
DIRECTIONS
You’ll need a 8″ x 8″ square baking pan for this.
Pre-heat your oven to 400 degrees.
NOTE: Don’t substitute for the Simple Mills All Purpose Baking Mix because in addition to the flours, it also has baking soda, cream of tarter and sea salt. This can go off the rails and not come out right if you just throw in any old flour or other baking mix.
In a large bowl, combine the Simple Mills All Purpose Baking Mix, date sugar, and pistachios. Add in the apple sauce, avocado oil, honey and vanilla. Hand mix it all up really well with a spatula.
Get your baking pan and take a tiny bit of the coconut or avocado oil and rub it around the bottom and sides of the pan (this can help it to not stick to the pan). Pour in the batter and level it out with your spatula. Bake at 400 for 20-25 minutes. It’s done when you put a knife in the center and it comes out clean.
Let it cool and cut into bars or squares. They come out deliciously sweet and chewy. I put these in a container with wax paper sheets in between. Store in fridge for up to 5 days.
