Super Easy Nectarine Salsa

INGREDIENTS

  • 1 large tomato
  • 2 small nectarines
  • 1/2 of a yellow onion
  • 1 jalapeño pepper (seeds removed)
  • 1 Tablespoon of lime juice
  • 1/4 teaspoon of salt
  • a few grinds of fresh black pepper

DIRECTIONS

NOTE: I’ve found the best way to make chunky salsa like this is not in an electric blender but a hand blender like this one from Target.

If you have a hand, spinning chopper use that. Cut up the tomato, jalapeño pepper (remove the seeds), and onion. Cut up the nectarines enough to remove the pits. You don’t have to cut these into really small pieces. Add the lime juice, salt and pepper.

Spin/chop it until it gets to your desired level of chunkiness. That’s it!

IF YOU DON’T HAVE A HAND CHOPPER: Just dice the tomato, nectarines onion and jalapeño pepper (remove the seeds) to your desired size of chunks. Put in a bowl. Add lime juice, salt and pepper and mix it all up. That’s it!

Makes 2 servings (or enough to use if you’re making another dish like tacos, bean burritos, etc).
