No Lettuce Salad
- 1 cucumber
- 2 tomatoes (can also use a small carton of cherry or grape tomatoes)
- 1 cup sprouts
- 2 tablespoons olive oil (sunflower oil also works nicely)
- 2 tsp lime juice
- salt and fresh ground pepper (to taste)
Dice up the cucumber. Dice the tomatoes (discarding as much of the seeds as you can). Put those in a big bowl. Add the sprouts, olive oil and lime juice and mix it all together. That’s pretty much it! I add the salt and pepper to taste when you’re serving it. This can make 2 servings, just double it (triple it, etc.) if you want to make more.
