No Lettuce Salad

INGREDIENTS

  • 1 cucumber
  • 2 tomatoes (can also use a small carton of cherry or grape tomatoes)
  • 1 cup sprouts
  • 2 tablespoons olive oil (sunflower oil also works nicely)
  • 2 tsp lime juice
  • salt and fresh ground pepper (to taste)

DIRECTIONS

Dice up the cucumber. Dice the tomatoes (discarding as much of the seeds as you can). Put those in a big bowl. Add the sprouts, olive oil and lime juice and mix it all together. That’s pretty much it! I add the salt and pepper to taste when you’re serving it. This can make 2 servings, just double it (triple it, etc.) if you want to make more.
