Black Bean Quinoa Burrito

Black bean, quinoa and tomato burrito

INGREDIENTS

  • 2 large (burrito size) tortillas of your choice
  • 1 can black beans
  • 1 cup of cooked quinoa
  • 1 cup of grape or cherry tomatoes
  • 1/2 yellow onion
  • 1/2 teaspoon powdered garlic
  • 1/4 teaspoon dried cumin
  • 1 tablespoon avocado oil
  • Salsa of your choice
  • 8 decent sized radishes

DIRECTIONS

NOTES: To make this recipe gluten or grain free, just choose appropriate tortillas.

Cook the quinoa as per the package instructions and set aside.

Chop up the 1/2 onion. Slice the grape or cherry tomatoes in half. Thinly slice all of the radishes.

Rinse the black beans under cool water in a colander. Put a large frying pan on medium low heat. Add avocado oil and onions and lightly sauté these for about 5 minutes. Add in the black beans, quinoa and the tomatoes. Stir and cook a couple minutes.

If you have a second frying pan, you can lightly heat up your tortillas.

Add the ingredients to tortillas. Add your salsa and roll up into a burrito. Serve with the radish slices on the side.
