Date Walnut Bars

INGREDIENTS
- 1/2 cup nut, oat, rice or chickpea milk (your choice!)
- 1/4 cup maple syrup
- 1/2 cup flour (regular or use gluten free or paleo flour)
- (optional) 1/4 cup unflavored pea protein (if you don’t want to add extra protein, just add an additional 1/4 cup of your flour)
- 1/4 cup old fashioned oats
- 1/2 teaspoon of vanilla
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup of crushed walnuts
- 4 large Medjool dates
DIRECTIONS
You’ll need a mixing bowl and a 8″ x 8″ backing dish.
Heat over to 350 degrees.
Take the pits out of the dates then chop those into little cubs (like 1/4″). They’ll be sticky, so try and unstick them as best as possible.
Put all ingredients in the bowl and mix with a spatula (it honestly does not matter what order you add the ingredients). Dough will be moist but not runny.
Get a tiny bit of olive oil (can also use coconut oil) and put it in the pan and wipe around the bottom and sides with a paper towel. This is to help keep the bars from sticking too much after they’re baked.
Smooth the dough down so it’s even in your baking dish.
Put it in the oven for 25 minutes.
Let cool slightly when you take it out of the oven, then cut into 8 squares. Be careful removing them from the baking dish as they have a tendency to break apart. I like to use a flexible turner to get them out.
These work great as snacks or even breakfast bars. Serve them with some fruit of your choosing.
