Flavors of Fall

INGREDIENTS
- 1 medium purple sweet potato (or regular if you can’t get purple)
- 2 yellow beets
- 1 bunch of small carrots
- 2 small apples
- 1/2 yellow onion
- 1/2 teaspoon of thyme
- 1/2 teaspoon of nutmeg
- (optional) coarse ground salt
- (optional) 2 Tablespoons olive oil
DIRECTIONS
Preheat over to 350 degrees.
Wash all the veg, then dice the sweet potato and beets. Slice the apples and then chop the slices in half. Slice the carrots. Chop the onion (larger chunks). Toss all that into a large mixing bowl. If you’re adding the olive oil, do so now and stir to coat the veggies and the apple. Sprinkle in the nutmeg and thyme and stir.
Transfer to oven safe baking dish. If you didn’t add olive oil, add a couple tablespoons of water to the baking dish. Cover the dish and put it in the oven.
Bake for 40-50 minutes. Check on it at 40 minutes. Everything should be tender when you poke it with a fork. Dish it out and add salt if you like. Should be at least 2 servings.
