Guilt-free Tiger Nut Muffins

INGREDIENTS

  • 1 Tablespoon of flax meal + 2 1/2 Tablespoons of water
  • 3/4 cup chickpea milk (you can use other nut milk if you want)
  • 1/2 teaspoon vanilla
  • 1/3 cup extra virgin olive oil
  • 1 1/2 cups tiger nut flour
  • 1/2 cup almond flour
  • 1/4 cup organic honey
  • 3 teaspoons baking powder
  • 1 teaspoon salt

DIRECTIONS

You’ll need a 12 muffin tray (or two 6 muffin trays).

Set your oven to 400 degrees.

NOTE: If you haven’t heard of tiger nuts before, they’re not nuts, but tiny tubers. So tiger nut flour is simply flour made from them. It can be hard to find this flour in a regular grocery store, so I have to buy mine online. The benefits of tiger nuts are that they are grain free, the flour actually works pretty well on it’s own (unlike some other grain free flours). They’re also high fiber, have antioxidant properties and contain iron, phosphorus, vitamin C, magnesium, zinc, potassium and calcium. So good stuff and worth trying out!

First step is to take the 1 tablespoon of flax, put it in a small bowl and add 2 1/2 tablespoons of water (this is basically like an egg substitute). You’ll need to let that sit about 5 minutes.

Get a big bowl and add all the other ingredients, then add the flax and water mixture. Hand stir everything lightly (don’t go wild) with a spatula. You’re just looking to get all the ingredients mixed together, so don’t over mix.

I like to add paper muffin cups in my muffin tray for easy clean up afterwards. If you don’t have muffin cups, hopefully your muffin tray in non-stick. If not, you may have a little trouble getting the muffins out when done, so I’d recommend investing in the paper cups (they’re not expensive).

Fill each cup about half way.

Put in the oven for 20 minutes. After 20 minutes, you can test a muffin by piercing one with a kitchen knife. It should come out clean. If for some reason it doesn’t, continue baking but check them again after 2 minutes. I’ve never had these not be ready in 20 minutes though.

Makes 12 muffins. These go great with any fruit of your choosing.
