Pineapple Sweet Potatoes

INGREDIENTS

  • 2 large sweet potatoes
  • 4 ounces of crushed pineapple (1/2 of an 8oz can)
  • 1 Tablespoon brown sugar

DIRECTIONS

You’ll need a frying pan and a steamer pot (if you don’t have a steamer pot, you can pick up folding steamer baskets online or in stores and they’re pretty cheap).

Peel the yams and then cut them into cubes that are all around the same sizes. Get a pot of water boiling on the stove and put the cubes in the steamer. It usually takes around 15 minutes to steam 1″ cubes. I’d check them with a fork around 10 min. and 15 min. When they’re done, take them off the stove and set aside.

Get your frying pan and put it on medium-low heat. Dump in the crushed pineapple (with the juice) and the brown sugar. Let the brown sugar fully melt while stirring with a spatula every now and then. Add in the sweet potato cubes and stir around. You’re not really cooking at this point, but flavoring the cubes with the brown sugar and pineapple. Give it about 5 or so minutes and then it should be done.

These are a popular holiday dish (Easter, Christmas, Thanksgiving) for me but also good any time.
