Simple Vegetable Soup

A simple vegetable soup with carrots, potatoes, green beans, cabbage, and onions

INGREDIENTS
About 6 cups of water
Spice mix: 1 1/2 tsp salt, 1/2 tsp pepper, 1 1/2 tsp garlic powder, 1 tsp celery salt, 1/2 tsp dried parsley

  • 3 small potatoes (your choice of what kind)
  • 4 medium sized carrots
  • 1 cup of fresh green beans
  • 2 cups cut up fresh cabbage
  • 1 medium chopped onion

DIRECTIONS

Cube the potatoes and carrots, put those in the pot, add the spices and bring water to a boil. Cover and cook those about 10-15 minutes on rolling boil. Add the green beans and cabbage. Cook about another 15 minutes on medium heat.

NOTE ON VARIATIONS: this is a really versatile soup recipe that I encourage you to play around with. You can add in a 1/2 cup of celery, use yams or sweet potatoes rather than regular potatoes, etc. etc.

This recipe makes about 4-6 servings. Will keep in the fridge for up to 4 days.
